Ingredients You Will Need:
- 2 pounds of ground beef
- 1 packet of brown gravy mix
- 1 can of mixed vegetables (corn, green beans, potatoes, carrots)
- 1 package of instant mashed potatoes
- 2 refrigerated pie crusts
- 1 cup of shredded cheese
Tip: You can gather all your ingredients from Aldi for under $6. It’s a treasure trove of affordable groceries!
Instructions:
- In a saucepan, cook the ground beef and drain the fat. Stir in the packet of brown gravy mix along with a tablespoon of water, and mix well.
- Drain the can of mixed vegetables and add them to the beef mixture. Stir to combine.
- In an 8×8 baking dish, press one pie crust flat and pour the ground beef mixture on top, smoothing it out evenly.
- Prepare the instant mashed potatoes according to package instructions and spread them over the beef and vegetable mixture.
- Sprinkle the top with shredded cheese. Season with salt and pepper to taste if desired.
- Place the second pie crust on top, pinch the edges to seal, and vent it with a fork. (Note: There are often heated debates in my household about who gets to do this!)
Baking Instructions:
Bake the Shepherd’s Pie as per the pie crust instructions, typically at 375 to 400 degrees Fahrenheit for about 15 minutes. When it emerges, it will be beautifully golden brown.
